{"id":138,"date":"2011-10-28T21:33:35","date_gmt":"2011-10-29T04:33:35","guid":{"rendered":"http:\/\/www.broos-campbell.com\/wordpress\/?p=138"},"modified":"2011-11-01T20:34:45","modified_gmt":"2011-11-02T03:34:45","slug":"chicken-and-cauliflower-curry","status":"publish","type":"post","link":"http:\/\/www.broos-campbell.com\/wordpress\/?p=138","title":{"rendered":"Chicken and Cauliflower Curry"},"content":{"rendered":"<p><strong>Easy Eats for Hard Times<\/strong><\/p>\n<ul>\n<li>2 cups cut-up chicken, raw or cooked<\/li>\n<li>1 onion, sliced in half circles<\/li>\n<li>1 red pepper, sliced in strips<\/li>\n<li>1 green pepper sliced in strips<\/li>\n<li>4 garlic cloves, minced<\/li>\n<li>2 tablespoons green ginger, minced<\/li>\n<li>Cooking oil<\/li>\n<li>2 potatoes, scrubbed and trimmed, but not peeled, cut in cubes<\/li>\n<li>\u00bd of a cauliflower, cut in bite size pieces<\/li>\n<li>4 tablespoons curry powder (more or less as desired)<\/li>\n<li>Salt to taste<\/li>\n<li>Plain yogurt<\/li>\n<\/ul>\n<p>Heat a large heavy skillet and pour in the oil to cover the bottom.\u00a0 Add the garlic and ginger, stir for 1 minute. Add chicken, onion, and peppers. Cover and cook on medium heat, stirring frequently, until chicken is opaque and peppers are just past crisp. Shake in 2 tablespoons curry powder and stir well. Meanwhile, steam the potatoes and cauliflower until they are fork tender. Add them to the skillet with a bit of the cooking water, and shake in the rest of the curry powder; stir again until color is even throughout. Add salt to taste.
